American Regional Spice Blends
A taste of America from Northeast to Southwest!
Our regional blends use all healthy ingredients, with no stabilizers, fillers, or artificial flavor enhancers. Just pure spices and herbs, with a touch of salt where needed. Because we don’t use anti-caking ingredients, you might have to soften blends that contain sugar. (We use dehydrated whole cane sugar from Just Panella.)

I start by hand-grinding whole peppercorns and dried lemon peel to preserve their volatility and control the grind. (I keep them slightly chunky for bite-sized bursts of flavor.) Then I add a carefully calibrated selection of Italian herbs to create a bright, tongue-teasing Mediterranean flavor.
Add it to vegetable and chicken stir-fry, season white fish or pasta cheese sauce, and add to your favorite vinegar-and-olive oil salad dressing. Also a great, full-flavor table condiment!
Low Salt (10 mg sodium/tbsp)
Ingredients: Lemon peel, peppercorn, onion powder, coriander seed, marjoram, thyme, rosemary, basil, sage, and sea salt
This blend has a definite kick to it! It’s also extremely versatile – add it to all grilled meats and seafood; sauteed, grilled, or baked vegetables; soup and chili; or any dish when you want a heat spike. Go subtly hot, or add more to make a statement…you can do both with my Spicy Hot blend!
Salt (70 mg sodium/tbsp)
Ingredients: smoky paprika, whole cane sugar, cumin, mustard powder, cayenne pepper, garlic powder, sea salt
My blend is in the “west” North Carolina sweet tradition, but I’ve married it to enough savory and spicy to satisfy many an “east” aficionado, too! It’s a perfect rub for smoked, oven-baked, or grilled pork, chicken, and beef. It’s also great on baked vegetables, makes a unique popcorn seasoning, and will spice up any dish!
Low Salt (10 mg sodium/tbsp)
Ingredients: whole cane sugar, smoky paprika, cumin, black pepper, garlic powder, cayenne pepper, oregano, and sea salt.
Mellow Santa Fe
Bring the taste of the American Southwest to your dinner table! This blend is delicious on beef, pork, and poultry, and makes a scrumptious addition to your favorite squash soup or homemade oil-and-vinegar dressing. Though it has a slight touch of heat in the background, the emphasis is on a complex blend of flavors that tickle your taste buds.
Low salt (10 mg sodium/tbsp)
Ingredients: cumin, coriander, dark chili powder, whole cane sugar, oregano, thyme, sage leaf, cloves, allspice, cinnamon, sea salt
Here’s that classic BBQ taste made from simple, pure ingredients. It’s so good it has become a consistent best seller. Use it to flavor grilled red and white meats, and baked or oven-fried potatoes. Mix some into sour cream for a delicious chip dip. Add it to melted butter and drizzle over popcorn. And, of course, keep the jar handy as a healthy, crowd-pleasing table condiment!

Spiced Butter Chicken
(uses Spicy Hot Blend & Kashmiri Garam Masala)
Make Butter Sauce by sauteing 1/2 cup diced onion in 1 tbsp oil (olive, coconut, or pure peanut) until translucent. Add 2 crushed garlic cloves, 1/2″ grated fresh ginger, 2 tbsp lemon juice, 4 tsp Kashmiri Garam Masala, 2 tsp Spicy Hot blend, 1 bay leaf, and 1/4 cup butter. Stir until fragrant, about 1 minute.
Add 1 cup tomato puree and stir 1 minute. Then add 1/4 cup plain full-fat yogurt and 1 cup half-and-half. Reduce heat to Low and simmer 10 minutes, stirring frequently.
While sauce simmers heat 1 tbsp oil (pure peanut is best) in large skillet. Add 1 lb cubed boneless chicken and brown (10-12 minutes). Sprinkle 1 tsp Kashmiri Garam Masala and 2 tsp Spicy Hot blend.
Add 1/2 cup of the Butter Sauce to the chicken and continue cooking until the sauce thickens. Then transfer chicken to the main pot of sauce.
Separately, combine 3 tbsp water and 1 tbsp corn starch in a small bowl. Pour into the butter chicken dish and simmer on medium-low until sauce thickens.
Serve over rice, garnished with chopped fesh cilantro and diced fresh tomatoes.
Thoroughly mix 1 tbsp Smoky Texas blend into 1 lb ground hamburger or chicken. Shape into hamburgers and grill as usual.
Note: Adding a blend that includes sugar will cause a “blackening” effect on the meat’s surface. Be sure to check for doneness by temperature or by slightly opening the burger to see if the center is at its desired level of cooked.
