Spiced Butter Chicken
(uses Spicy Hot Blend & Kashmiri Garam Masala)
Make Butter Sauce by sauteing 1/2 cup diced onion in 1 tbsp oil (olive, coconut, or pure peanut) until translucent. Add 2 crushed garlic cloves, 1/2″ grated fresh ginger, 2 tbsp lemon juice, 4 tsp Kashmiri Garam Masala, 2 tsp Spicy Hot blend, 1 bay leaf, and 1/4 cup butter. Stir until fragrant, about 1 minute.
Add 1 cup tomato puree and stir 1 minute. Then add 1/4 cup plain full-fat yogurt and 1 cup half-and-half. Reduce heat to Low and simmer 10 minutes, stirring frequently.
While sauce simmers heat 1 tbsp oil (pure peanut is best) in large skillet. Add 1 lb cubed boneless chicken and brown (10-12 minutes). Sprinkle 1 tsp Kashmiri Garam Masala and 2 tsp Spicy Hot blend.
Add 1/2 cup of the Butter Sauce to the chicken and continue cooking until the sauce thickens. Then transfer chicken to the main pot of sauce.
Separately, combine 3 tbsp water and 1 tbsp corn starch in a small bowl. Pour into the butter chicken dish and simmer on medium-low until sauce thickens.
Serve over rice, garnished with chopped fesh cilantro and diced fresh tomatoes.
Thoroughly mix 1 tbsp Smoky Texas blend into 1 lb ground hamburger or chicken. Shape into hamburgers and grill as usual.
Note: Adding a blend that includes sugar will cause a “blackening” effect on the meat’s surface. Be sure to check for doneness by temperature or by slightly opening the burger to see if the center is at its desired level of cooked.
